Soup for One

While Jon's away, I haven't paid much attention to meals. But last night I got HUNGRY-FEED ME- and spotted the butternut squash. I googled some recipes, switched things around, and had a delicious soup. I'll post it here so I'll remember how I did it next time, which just might be tonight!

Split a butternut squash lengthwise, scoop out the seeds, give them to the chickens. Brush both halves with melted butter, and sprinkle garlic salt too. Roast at 400 degrees flat side down for around 1/2 hour, until soft.

Scoop out the insides into a pan without burning yourself. Add chicken broth-- my squash was small so I only used half a can. Add a TB or two of honey, and curry powder. Now our curry powder is rather old so I added 2 or 3 TBs. Stir it together, then dump in a blender or Cuisinart and hope it doesn't spit out the top (put a pot holder over it.) Add a little milk-- I'm sure cream would be even better, and reheat. It was most delicious, and easy.

I was sorry there wasn't more. I had a crispy La Brea roll with it. I don't like the bread they sell already baked because it's like playing tug with Molly, but their frozen rolls are quite tasty.

Thanks for posting! Soup is all I want to eat this week. It's difficult chewing on one side of my mouth. Butternut squash is one of my absolute favorites. The hardest thing is slicing it (aggravates my "blackberry thumb" tendonitis). Our department secretary microwaves the halves for 7 minutes to speed things up.

The soup sounds pretty good, but it's the bread everybody but me knows about that I'm after. I googled it and I'm driving right to Whole Foods to get a loaf.

p.s. I'm worried about your eating rotten curry and remember when you said your rice was 4 years out of date? What if you get botulism?

Linda, I don't think curry powder goes bad, but it does lose its punch. I keep thinking about your friend whose wife died from mad cow. Was that in the US?

Yes--Well, they lived in TN but they traveled a lot, so no one was sure where she got it. I think there is little/no publicity about this disease, actually called bovine spongiform encephalopathy.

Honey and curry powder appealed to me. That'a a good soup. I've made it before, but now it's better, with sweetness and warmth. Thanks --Katy

Katy, I'm glad. I think the little bit of heat with the honey really does change things.
